The Gaddum Restaurant opened its doors in April 2018 and has quickly established itself as one of the most beautiful settings for lunch and afternoon teas in the Lake District. Our reputation for fantastic food and spectacular Afternoon Teas has more than matched the setting. With wall to wall 5 star reviews for our Afternoon Teas, and many describing them as the best in the Lake District, we need an ambitious, enthusiastic and skilled pastry chef to continue building on this reputation.
The Gaddum is sited in Brockhole House, a great Arts and Crafts house set in 30 acres of stunning Thomas Mawson designed listed gardens on the shores of Lake Windermere. The house and site are also home to multiple cafés, a shop, an art gallery, meeting rooms and many visitor attraction activities.
With the Lake District now a designated World Heritage Site, this is a great opportunity to make a significant contribution to the main visitor centre for the Lake District, currently visited by over 300,000 people per year.
Reporting to the Head Chef, the Pastry Chef will be responsible for creating and delivering the Afternoon Tea offering, along with all associated baking and dessert work for lunches and seasonal evening opening. Core tasks also include coordinating and delivering all home baking, such as cakes, pastries, scones and tray bakes for the main cafés on site. The Pastry Chef will also be expected to assist with or supervise the making of our busy daily sandwich offer for the cafés and shop, and if there are no Afternoon Teas required to assist the Head Chef with other food preparation in the restaurant.
The Pastry Chef will also assist with baking and sandwiches for corporate hospitality events that run throughout the year. From May to September in 2019, Brockhole House may be open in the early evenings for sunset diners and the Pastry Chef will assist in the creation, preparation and delivery of the dessert menu. As a Pastry Chef, you will have already gained some experience in working in a high quality environment producing fine patisserie, sugar work and chocolate work. You will be highly motivated, with strong organisational skills, along with the ability to problem solve and think on your feet. If you know your choux from your entremets and can produce the goods to impress, we would love you to join our catering team.
Your working week will normally be 5 days over 7 which may include either a Saturday or Sunday or both, but extra days may be required during busy periods. Our busiest times will be during school holidays.
